Tie Me Up Poussin with Madeira Sauce   Total Time:1 hr 50 minPrep:30 minInactive:20 minCook:1 hrYield:6 servingsLevel:IntermediateIngredients3 poussins, see Cook’s Note*1 bunch fresh sageKosher salt, for seasoning3 lemon wedges1 bunch fresh thyme1 bunch fresh rosemary6 tablespoons unsalted butter, softened1 pomegranate, seeds removed and reserved for garnishMadeira Sauce:1/2 cup Madeira wine1 cup heavy cream1 tablespoon unsalted butterSalt DirectionsMadeira Sauce, recipe follows:Special equipment: butcher’s string, 1 large oven-safe saute panPreheat the oven to 450 degrees F.Wash and pat dry each poussin. Tuck 1 sage leaf under the skin of each breast. Season the inside of each cavity liberally with salt. Stuff each cavity with 1 lemon wedge and a generous amount of fresh thyme, rosemary, and sage. M is for Mushed Mushed lips is the expression my wife wears when she is told something she doesn’t like. It is a cross between a pout and a pucker and is uniquely hers.
